I made some Christmas cookies so I thought I’d post the recipe here.
Have fun baking!!
- 100gm butter
- 200gm flour
- 100gm sugar
- 1/2 tsp ginger powder
- A pinch of baking soda
- Few drops of golden syrup or honey.
Pre heat the oven at 180 C.
Before you begin, keep the butter outside in room temperature for about an hour, to make the butter soft. In a mixing bowl, add the sugar and butter and mix them well. Then add the flour, ginger powder and baking soda and mix them well. Make sure you are using baking SODA and not baking powder. This is very important. If your dough is very dry and breakable then add a few drops of golden syrup or honey. I used honey to make mine. You don’t want your dough too sticky either. Roll them and cut them into shapes. Place them on baking paper. Bake at 180 C for 15 min or till done. It might take more or less time depending on your oven. On baking if the cookies rise, gently press them down with a spoon. Wait until the cookies are completely cool before you add the icing.
My trees came out really weird shaped. :S
And for the Royal Icing:
- 1 large egg white
- 1 tsp lemon juice
- 300gm icing sugar
- Gel food coloring
Beat the egg white and lemon juice until clear. Add the icing sugar and beat on low speed until fluffy. Add more sugar if needed. You can then add gel food coloring if you want. Pipe them in a bag and decorate!
You could also add some sprinkles to make the tress look more Christmasy! 😀
